Our workshops and courses are developed using fresh, organic, local, seasonal produce, so the recipes in our workshops are planned according to what the market has to offer. Not a difficult task with the bounty of California!
Catalan cuisine is perhaps most widely known for the innovative style of chef Ferran Adria and his many disciples of modern gastronomy. Yet in this hands-on workshop we will learn to prepare some traditional Catalan recipes, which are also some of my favorites.
The Basques pride themselves as a people independent from the rest of Spain. They are also proud to have the city with the highest amount of Michelin stars per capita; food is an obsession for the Basques.
Although many people misleadingly believe that tapas are a national Spanish custom, Andalusía, southern Spain, is the true home of the tapa. In this hands-on workshop, we will learn what real tapa is the Andalusian way (which means: with a generous dose of olive oil, wine and conversation).
Chill out in the south of Spain! Everyone knows gazpacho and the countless versions that contemporary chefs have developed. But gazpacho is only one of many cold soups that stem from warm Andalucía. In this class, we prepare our own take on gazpacho, as well as other delicious cold soups, such as ajoblanco and salmorejo, which are both nutritious and refreshing, perfect for the summer months. Soups are served with country breads and a Spanish Salad – plus a sip of fino sherry.

But Catalan food culture has a long traditional history. In this hands-on workshop we will prepare Catalan recipes with local, seasonal ingredients. We are fortunate that our California bounty is quite similar to the Mediterranean fare, allowing us to recreate these delicious food traditions.
