Cooking with Spanish Olive Oil

An interactive exploration of the varieties, nuances and uses of Spanish olive oils. You will sample various oils, gaining knowledge of how good olive oils should taste while training your palate to recognize their attributes.

Camila will lead you in preparing 3 recipes, incorporating the oils in different techniques the oils are well suited for: raw and fragrant in classic chilled soup Ajoblanco, gently heated to poach tender Tuna Confit (giving those super fancy canned or jarred tunas a run for their money), and baked in sensational, naturally gluten-free Chocolate Olive Oil Cake. Experience the ways artisanal oils can elevate even the simplest dishes.

Class will end with a healthy and delicious meal for your lunch or dinner table and great olive oils for your pantry.

In collaboration with Castillo de Canena, one of Camila’s favorite olive oil producers, this class includes the option to purchase an olive oil kit  with 3 high quality Spanish oils, as well as resources for sourcing the oils yourself.
