Gluten Free Sourdough Bread (ONLINE)

Gluten free sourdough bread is within the reach of every home baker. Frustrated by the highly refined ingredients in many commercially available gluten free (GF) breads, Chef Camila embarked on a quest to bake her own. She has practiced and tweaked the process to her satisfaction and is excited to share her knowledge as you make bread together in this interactive online class.

Class materials:

  • GF sourdough starter, available for pick up at The Civic Kitchen SF (no additional charge).

  • Optional ingredient kit containing all ingredients needed for the class, available for pick up at The Civic Kitchen (additional charge; see below.)

  • Short videos from chef Camila, showing you how to feed your starter the day before class, and how to finish baking after our Class 1 session concludes.

Class schedule:

  • The night before class, feed your starter as demonstrated in Camila's video.

  • In Class 1, Camilla will teach you the basics of GF sourdough bread baking, with troubleshooting tips and pitfalls to avoid. She will discuss the creation and maintenance of your own starter, and guide you in making a simple cracker recipe to use up leftover starter. She will lead you in measuring and mixing your dough, which will then be left to rise.

  • After Class 1 has concluded and your dough has risen, you’ll bake your loaf at home. Don’t worry, we’ll provide a video from Camila showing you exactly how to finish everything off.

  • Finally, participants will reconvene the following morning for Class 2, a one hour Q&A (and bread show-off!) session.

Videos and the instructions for picking up starter and/or ingredient kits will be sent via email after you register for class. If you reside outside the San Francisco Bay Area, we will provide instructions for making your own starter. If you wish to make your own starter, you should begin at least 2 weeks before the class.
