In Spain, people spend what they don't have over the holidays. January is a month to recover from all the excess, not necessarily (just) the indulging in food, but also financial loss from all those gifts you gave to your loved ones. This month of being cheap even has its own name: "la cuesta de enero", which translates roughly as "the January hill" because it's all uphill.
Nevertheless, good food certainly doesn't require a big budget. In this class we will focus on a few delicious cheap eats from Spain.
