We are in the depths of summer, and whether a trip to Iberian Peninsula is in the cards for you, this class will transport you to Spain! Camila selected a few of her favourites from different regions of Spain, designing a tapas-style meal to be shared with loved ones, and meant to make you feel refreshed! First, salmorejo will highlight the flavor of tomatoes and cool you down (in Camila's opinion, it's much better than gazpacho!). Follow this soup with a Catalan bean salad that nourishes you without feeling heavy, featuring more tomatoes and peppers. Zucchini, the plentiful summer vegetable, takes the stage with method of preparation from the Balearic island of Menorca. To close the meal, we will pair luscious fresh figs with honey and soft cheese, a classic combination.
