In all of Spain, bars are gathering spots where food, drink, and socializing are an inseparable triad. Though Spaniards frequent their local favorites year-round, warm weather draws everyone outside into streets and bars overflowing with conviviality during aperitivo/vermut hours...or rather, whenever possible! Join Camila to prepare some celebrated Spanish bar food recipes.
Patatas Bravas—satisfying, affordable, a great accompaniment to any drink—may be the all-time classic, served in every bar all over Spain (with regional variations). This class’ version is beloved in Madrid.
Chickpeas with Salmorejo hail from sizzling southern Spain, where cold soups mean summer refreshment. This salmorejo doubles as a creamy sauce atop a delicious chickpea salad. Southern Spanish flavors at their peak!
Garlic Shrimp is another mainstay served nationwide. Seafood abounds in most Spanish regions, and this tapa is simple to prepare but packed with flavor and ideal for dipping good crusty bread, the Mediterranean way.
Manchego Montadito is a bit of an homage to Basque pintxos and highlights summer produce at its best. You will want to employ its herb oil garnish in and on everything, including more bread or veg dipping.
We will accompany this bar-inspire menu with a Marianito, Camila’s favorite vermut-based drink. In Spain, vermut is always of the sweet kind. If you prefer wine or beer, they are more than welcome, too. As long as there are friends, food, and beverage, you are good to go (to Spain)!
