Catalan cuisine is perhaps most widely known for the innovative style of chef Ferran Adria and his many disciples of modern gastronomy. Yet in this hands-on workshop we will learn to prepare some traditional Catalan recipes, which are also some of my favorites. These are the sort of dishes that everyone in Barcelona eats come springtime, taking advantage of my favorite produce-season of the year. Join me in San Francisco for some springtime sobremesa.
Here's the menu:
Catalan-style Peas (with Butifarra Sausage and Panceta)
Artichokes with Clams
Pa amb Tomaquet (Rustic Bread Rubbed with Tomatoes and Olive Oil), served with Spanish Ham and Idiazabal Cheese
