Spanish cuisines are not known for their level of spice. That said, there are a few spices that are used time and again, and that are truly special and worth incorporating into your pantry and cooking routine. In this class we will focus on the two most prevalently used spices in Spain: fragrant saffron (the most valued spice in the world) and paprika, at its smoky sweet best!
We will cook our way through a menu that intentionally highlights the best that each spice has to offer. Saffron will become the perfect complement to a clam and white fish soup, with its fragrance balancing the gentle umami of the sea. We’ll prepare a bravas sauce as the quintessential accompaniment to Patatas Bravas, the utmost classic Spanish tapa, and Camila will provide instructions to prep the potatoes on your own for the best results. The classic Spanish version of the sauce is never too spicy as per Spanish preference but you can tweak it to your liking, giving it a bit more fierceness (i.e. more bravas!). Crispy spiced chickpeas will find their way into the mix as an addictive, crunchy, satisfying and nutritious snack or salad topper! We’ll end on a sweet note with a very traditional rice pudding, using saffron to elevate it to another level.
