Meals in Spain follow a reliable pattern; the equivalent of brunch is a hearty second breakfast, around 11am, which usually consists of a big sandwich on baguette or a "pincho de tortilla", a wedge of the famous Spanish omelet, accompanied by bread -with tomato if it's in Catalonia. Potato omelet might just qualify as the national dish, as it’s ubiquitous.
In this class, we will learn to make tortilla the traditional way, and enjoy it for brunch (quite frankly, it's delicious any time of the day). One of the big secrets is using enough eggs, and now that they are in season, it's the perfect time to master this versatile dish!
